Brewed by Casey Conley as part of the Perrin Brewer Series, Redbeard’s Ryevenge is a riddle wrapped in a mystery wrapped in an enigma. Is it a rye beer? Is it a Brett beer? Is it an IPA? The answer is…it is ALL THREE!!! Rye was only 7.5% of the grain bill so you get a subtle spiciness and dry finish. This beer was hopped with over 75lbs of Amarillo, Ella and Motueka hops. Fermented using Brett Trois yeast which offers nice tropical phenols and a slight funk. Olive oil was used in the whirlpool to produce oleic acid, which is normally produced by yeast synthesizing oxygen. Essentially, skipping the “middle man” of aerating the wort. Expect this beer to have a considerable amount of tropical and citrus flavor and aroma. Sláinte
